Chet and I decided, despite him having to work tonight, to celebrate St. Patrick's day with a Americanized Irish meal. :) A little soda bread, potatoes, cabbage, carrots and corned beef. Oh, and the not-so-Irish dessert of lemon bars. We ate far too much but it was quite delightful.

Meyer lemon bars. I kept stumbling upon lemon bar recipes tonight as I was looking at websites and I had a bag of Meyer lemons in the fridge just waiting to be used. I took it as a hint that I should make my sweet hubby a treat! They are delicious!
